Spelt is UNIQUE!! It only contains one of the proteins needed to produce strong gluten, therefore people with gluten sensitivities might be able to enjoy breads, cookies and soups made with spelt.Spelt is an ancient grain which can be traced back to early civilizations 9000 years ago.

Spelt is a cross between Emmer wheat and Goats Grass and has a distinctive, nutty flavor.  This is a hulled heritage wheat variety and is milled in our 'New American' Stone Mill.
