Tex-Mex Wheat Berry Grain Bowl
Description
There are so many delicious ways to enjoy whole grains beyond flour! Cooked wheat berries make a hearty, nutrient dense side dish or the perfect base for a grain bowl. Their mild, nutty flavor pairs well with a variety of cuisines, making them incredibly versatile. This Tex-Mex inspired version is one of our household favorites, but feel free to customize the flavors and toppings to make it your own!
Ingredients:
For the Wheat Berries:
• 1 tablespoon butter or oil
• 1 cup Guardian Grains wheat berries of choice (I used Hertitage Turkey Red Wheat Berries)
• 3 cups stock or broth
• ½ packet taco seasoning (or seasoning of choice)
• Salt, to taste
Suggested Grain Bowl Toppings:
• Shredded chicken
• Blistered peppers and onions
• Black beans
• Corn
• Guacamole
• Sour cream
• Salsa
• Queso fresco
Instructions:
Step 1: Toast the Wheat Berries
Place a medium sized pot over medium high heat. Add the butter or oil and allow it to melt or heat through. Add the wheat berries and stir constantly, toasting them until they begin to pop slightly, similar to tiny popcorn kernels.
Step 2: Cook the Wheat Berries
Immediately pour in the stock or broth. (Maintain a 1:3 ratio of wheat berries to liquid if adjusting the recipe size.) Bring the mixture to a rolling boil, then cover and reduce the heat to a simmer.
Allow the wheat berries to cook until the liquid has been absorbed, stirring minimally during cooking. If the grains are not yet tender, add additional liquid a little at a time and continue cooking until the desired texture is reached.
Season with salt and taco seasoning, or any additional seasonings you enjoy.
Step 3: Assemble the Grain Bowl
Spoon the cooked wheat berries into a bowl as the base. Top with your favorite Tex-Mex ingredients. We love using shredded chicken, blistered peppers and onions, black beans, corn, guacamole, sour cream, salsa, and queso fresco.
Serve warm and enjoy!
